Alongside Lolita, Trogo features a rotating group of in-house chefs, including a dedicated vegan chef and former culinary instructors, whose diverse backgrounds and specialties bring creativity and depth to each menu. Founder Cian O’Mahony, a dedicated pitmaster celebrated for his slow-roasted pork and the best souvlaki west of Athens, grounds the business with a strong commitment to sustainability, sourcing ingredients from Trogo’s onsite urban micro-farm.
