Wash Hands and Wear Aprons: Encourage all staff to wash their hands thoroughly and put on clean aprons before starting work. Clean as You Go: During food preparation, clean up spills, wipe down surfaces, and wash utensils and cutting boards as you work to prevent cross-contamination. After Cooking: Once cooking is done, immediately clean pots, pans, and utensils. Soak any heavily soiled items to make cleaning easier later. Wipe Down Surfaces: Wipe down countertops, prep tables, and other surfaces with a clean cloth and an appropriate sanitizing solution. Empty Trash Bins: Regularly empty trash bins to prevent odors and the attraction of pests. Sweep and Mop Floors: Sweep the floors to remove debris, and then mop using a suitable cleaner to maintain cleanliness. Clean Cooking Appliances: Wipe down stovetops, ovens, grills, and other cooking appliances to remove grease and food residue. Sanitize Sinks and Dishwashing Area: Clean and sanitize sinks, faucet handles, and the dishwashing area to prevent the growth of bacteria. Weekly Cleaning Routine: Deep Clean Appliances: Remove and clean burner grates, oven racks, and other removable parts of appliances. Clean the inside of ovens, microwaves, and refrigerators. Clean Refrigerators: Discard expired items and wipe down shelves and drawers. Clean the exterior of the refrigerator. Scrub and Disinfect Surfaces: Use a food-safe disinfectant to thoroughly clean all surfaces, including countertops, prep tables, and cutting boards.
