Morning Opening
Front of House
Wipe down all tables, chairs, and counters with food-safe sanitizer.
Sweep and mop the floor before opening.
Check that trash bins have clean liners.
Bar & Service Area
Sanitize espresso machine surfaces, steam wand, and portafilters.
Clean the grinder hoppers and remove leftover coffee grounds.
Make sure all utensils and smallware are washed, sanitized, and air-dried.
During the Day
Wipe spills immediately—especially around the espresso machine and prep counter.
Empty trash bins regularly.
Keep all surfaces crumb-free and organized.
Run glassware and dishes through the dishwasher frequently to avoid pile-ups.
Sanitize tables and chairs between customers when possible.
Closing Routine
Front of House
Remove all items from tables and wipe down with sanitizer.
Sweep and mop floors thoroughly, paying attention to corners and under furniture.
Clean all glass surfaces (windows, doors, pastry cases).
Take out trash and recycling; replace liners.
Bar & Equipment
Flush espresso machine and clean group heads with backflush detergent.
Wash and sanitize milk pitchers, portafilters, and drip trays.
Wipe and sanitize the grinder area and counter.
Clean sinks and wipe faucets dry.
Kitchen/Back Area
Wash, rinse, and sanitize all utensils and equipment.
Wipe prep tables with disinfectant.
Sweep and mop the floor using a degreasing cleaner.
Turn off lights, equipment, and lock all doors.
